    This is a partially trimmed primal with the membrane removed (189A). This is a product received at high-end restaurants for cutting into individual filet mignons or serving as a full tenderloin roast.

    Exceeds Expectations, AGAIN

    Once again, CF comes through with the goods. I thought to order my Christmas tenderloin for my traditional Beef Wellington early this year and as my attendee group is still growing, I requested a tenderloin on the larger side of the spectrum. Dressed out, with a few filet mignons aside, the Wellington tenderloin weighed out at a whopping 72 ounces of tenderloin bliss and exceeded my desire. It has been triple wrapped and vacuum sealed until its expected use on Christmas Eve. From the many I have dressed out, this one appears to be super tender and I am favorably looking forward to the kudos it will bring for my at anniversary dinner.

    Takes a little skill to butcher but best value by far vs buying individual steaks. For reference, I got 8 filets that are about 6-8 oz each, a couple pounds of filet tips and a few lbs of filet medallions. Works out to 16 portions which is a great value.
